Chinese Asparagus Mix

  • 1 cup toasted sesame seeds
  • 1  pounds of asparagus
  • 1 cup of mung beans
  • 1 TBSP of Soy Sauce
  • 1 TSP of Sesame Oil
  • Asian Red Chili Oil (to taste)

Directions: Toast the sesame seeds in a pan over medium heat until you smell the aroma and they are toasted. Set to the side.

Break the tough ends off the asparagus stalks. Cut the remainder into two inch diagonal pieces. Cook in the asparagus in boiling water until bright green and crisp. Remove from the heat and give the cooked asparagus an ice bath to stop the cooking and retain the crispness. Spin and or pat dry.

Mix together the sauces and oil to your liking. Mix the asparagus and mung beans and toss with the sauce mixture. Sprinkle with the toasted sesame seeds. Serve at room temperature.
