Caprese Sprout Salad

Makes 2 – 4 Servings

Ingredients:

  • Where possible use other Colorado Proud products
  • 2 Large tomatoes, sliced ¼” – ½” thick
  • 1 Fresh Mozzarella cheese ball sliced ¼” thick
  • 2 Tbsp. Minced or finely chopped red onions
  • 2 Tbsp. (Optional) chopped roasted red pepper, adds lovely color and flavor to the salad
  • Approx 2 – 3 Tbsp. Drizzle with extra virgin olive oil
  • Approx 2 Tbsp. Drizzle with balsamic vinegar
  • 2/3 cup Zesty Sprouts or Clover and Onion Sprouts
  • Coarse kosher salt or sea salt and freshly ground pepper to taste

Directions: This salad tastes best when served at room temperature. It can be made ahead and refrigerated. If you prepare it ahead, allow about 20 minutes for it to return to room temperature. Also if you prepare it in advance, I recommend adding the sprouts, oil, vinegar, salt and pepper immediately before serving. The presentation will be crisper and the texture contrasts enhanced.

This salad is excellent any time of year, and is very versatile for pairing with different foods. It can also be used as a light meal / simple appetizer / snack atop lightly toasted French baguette bread.
